Artichokes
vary greatly in size. Differences are not related to quality or maturity,
but are determined by the part of the stalk the buds grow on; large ones
on the center stalk, smaller ones on side branches, and "baby"
artichokes (weighing about 2 ounces) at the base.
The largest artichokes, entree-sized specimens weighing a pound or more;
are best when stuffed with a savory filling and served hot or cold. The
medium-size artichokes are recommended for eating with sauces as an appetizer.
The baby artichokes are completely edible when properly trimmed, and are
often marinated and served in salads and in hot or cold antipastos.
