Collard
greens are a non-head, Old World cabbage that tastes like a combination
of cabbage and kale. Its intense green leaves are far more nutritious
than paler-leafed cabbage. Traditionally in the Southern United States,
collard greens are boiled with a piece of salt pork or ham hock.
Choose collard greens that are relatively small and firm. Avoid those
with any sign of yellowing or holes. Store collard greens in damp paper
towels inside a plastic bag. Collard greens can go limp quickly, so use
within 10 days of storage.
