Potatoes are harvested somewhere in the United States in every month of the year as they are a commercial crop in 48 states. They also keep well if stored under the proper conditions. As a result, there is an endless peak season, with no periods of short supply. The principal growing states with an autumn harvest include Idaho, Washington, Oregon, Maine, and New York; major winter and spring crops are harvested in the South and Southwest.
